This presentation introduces LEVAN, a biomimetic product inspired by the natural world. LEVAN is found in cold weather plants, extremophiles, and the traditional Japanese food natto, and has been used by living organisms since ancient times. However, due to industrial challenges, it has not been used very often. In recent years, the development of LEVAN for industrial production has progressed, and its potential has been reevaluated. We will introduce this old and new LEVAN from a biomimetic perspective, focusing on its application in cosmetics, and also introduce the sustainable product development of Nikko Chemicals.
